Glutinous rice is carefully steamed, then fried, giving a light and crisp texture that shatters cleanly. The natural sweetness of the rice is drawn out with a light touch of soy sauce — nothing more. Simple, and all the harder to make for it.
How to Enjoy
Best with green tea, or as a light savoury note alongside sake or beer. The clean rice flavour also makes it a natural companion to drinkable dashi.
